Preparation of Blinis with Caviar Without Cooking
The recipe for authentic Russian blinis is no secret. With just a few steps, you can prepare your own Russian delicacies in your kitchen. For the blinis, first, put 150g of buckwheat flour into a bowl. Mix it with about 100g of regular flour and then use your fingers to form a small well in the flour. Crumble half a cube of yeast into the well and pour 350ml of lukewarm milk into the bowl. Stir everything thoroughly, making sure no lumps form. Now cover the dough and allow the yeast about 30 minutes to rise.
After half an hour, check if the dough has risen. If necessary, add a little more milk, flour, and lukewarm water. Then add 50g of melted butter and two eggs. You can now refine the dough with a pinch of salt. Let it rise for about three hours. After the dough has had enough time to rise, you can heat a pan and melt some butter. Using a small ladle, drop a dollop of blini dough into the pan. Each pancake should have a diameter of no more than ten centimeters. Bake the blinis over medium heat until small air holes form on the uncooked side. Now you can flip the small pancakes and bake them golden brown on the other side.
Refining Blinis with Caviar
Finally, spread each pancake with a large spoonful of sour cream. The sour cream should form a small mound on the blini. You can also mix the sour cream with a little salt and sugar beforehand. Now add a teaspoon of caviar on top and enjoy your hearty, delicious snack, preferably while the small blinis are still warm. Feel free to try different types of caviar.
