Buy wild salmon: sockeye and pink salmon from the Pacific

Wild salmon is the benchmark against which every serious cook measures the fish on their plate. Firm, deep-red flesh, a clean note of the sea, none of the buttery softness of farmed varieties. At IKRiNKA we work exclusively with Pacific wild-catch from Alaska and the Kamchatka Peninsula. Two species are on offer: sockeye salmon (Oncorhynchus nerka) and pink salmon (O. gorbuscha), prepared in the classic traditions of Northern European and Far-East cuisine.
