Why is Gorbuscha cheaper than Keta?
Pink salmon stocks in the Pacific are much larger than Keta stocks (Pink salmon spawn annually, Keta less often). Pearls are smaller, giving a less 'exclusive' mouthfeel. Concretely at IKRiNKA: Gorbuscha «Classic» 11,90€/100g vs Keta «Classic» 16,90€/100g - Gorbuscha is about 40% cheaper. Still high-quality wild-catch caviar from Kamchatka and Alaska.
What is Pink Salmon (Buckellachs)?
Pink salmon (Oncorhynchus gorbuscha) is the smallest and most common Pacific salmon species. Adult fish weigh 1-3kg. Characteristic: the hump that males develop during spawning. The roe (Gorbuscha caviar) has smaller pearls but more intense flavor than those from larger salmon species.
Where does IKRiNKA Gorbuscha caviar come from?
Our Gorbuscha comes from wild-catch in the North Pacific, primarily Kamchatka and Alaska. It's processed directly at the catch site using traditional Malossol salting (3-4% salt) to preserve freshness and aroma. Traceability to the catch site is guaranteed.
Is Gorbuscha caviar suitable for sushi?
Yes, absolutely. Gorbuscha pearls (3-4mm) are ideal for ikura sushi (gunkan-maki). The bold flavor pairs beautifully with nori, rice, and wasabi. Important: Gorbuscha caviar should come from a specialty retailer or online shop (not pasteurized). At IKRiNKA: Gorbuscha «Classic» 100g for 11,90€ - enough for 5-6 sushi portions.
Why is Gorbuscha called 'the classic'?
Gorbuscha caviar has been the 'standard' of red caviar in Russian-Eastern European cuisine since Soviet times - especially for New Year, Easter, and family celebrations. 80% of red caviar worldwide is Gorbuscha. The classic bold flavor, medium pearl size, and moderate price make it a universal gastronomic product from Kamchatka and Alaska.
