Bring fish stock, oyster liquid, and half of the champagne to a boil with spices and reduce to about 300ml. Add cream, bring to a boil again, poach oysters for 1 minute, remove and keep warm. Strain the sauce, stir in butter, then add the remaining champagne and whisk everything until foamy.

Sprinkle a preheated plate with coarse salt, place the shells with one oyster each on it, pour sauce over them, and garnish with 1 tsp of caviar per oyster.
