This results in the low supply and thus the high price of real sturgeon caviar. Red caviar, on the other hand, comes from salmon species such as chum salmon, pink salmon, or sockeye salmon. These fish spawn every year, which makes egg harvesting easier and availability significantly greater – accordingly, red caviar is cheaper.

Which caviar is healthier – red or black?

The high price of black caviar does not stem from its nutritional value, but exclusively from its rarity. In terms of health, both varieties are equally valuable. Both red and black caviar provide high-quality protein, omega-3 fatty acids, and a variety of important minerals such as iron, phosphorus, magnesium, potassium, and sodium, as well as numerous vitamins. Both are rich in folic acid and lecithin.
