There is perhaps no other product whose perception has changed as often throughout history as black caviar. Once, it was a waste product for many fishermen – carelessly discarded because sturgeon was primarily caught for its meat. In the 20th century, however, valuable and delicious caviar became so coveted that entire fish stocks were almost wiped out. Today – thanks to the growth of modern aquaculture – sturgeon caviar is becoming more accessible again and is enjoying increasing popularity worldwide.

Black Caviar by Sturgeon Species

Although it is generally referred to as "black" caviar, its color palette ranges from anthracite to silvery to golden yellow. The lighter the color, the more valuable the product (more on the price range of caviar in Germany). Among the best-known and most popular varieties are Beluga, Russian, Siberian, American Sturgeon, Sterlet, and Sevruga caviar. Although all these fish belong to the sturgeon family, their roe differs significantly – in size, color, and taste – so much so that it's hard to believe it's the same natural product.

Caviar by Ripeness and Processing

The controlled farming of sturgeon in aquaculture has not only helped save this endangered fish species but also makes it possible to determine the ideal time of ripeness and to harvest the caviar in optimal condition. Ripe caviar is known for its grainy texture, firmness, and full flavor. This type is minimally processed – after removal from the roe sac, the caviar is washed, salted, possibly preserved, and bottled after a short ripening period. This classic form is known and popular as grainy caviar (Malossol).

Less known today is pressed caviar (Payusnaya) – often made from a mixture of roe from different sturgeon species, lightly heated, and pressed. The result is a firm mass that is offered in blocks and served sliced like butter.

What to look for when buying?

How do you choose high-quality sturgeon caviar? No matter which variety you prefer – the most important thing when buying is the CITES label on the packaging. It contains all relevant information about the product – from the manufacturer to the production date. According to current EU regulations, the CITES seal must be affixed in such a way that it is destroyed when the tin is opened – this prevents the packaging from being reused or manipulated. This protects you from counterfeits and repackaging.

Always check the expiration date and only buy from trustworthy providers. Do not hesitate to request certificates or proof.
