The caviar may contain a large amount of preservatives, which on the one hand extend shelf life, but on the other hand impair taste quality. A typical example is hexamethylenetetramine (urotropin), a food additive banned in European countries.

After washing, the caviar should drain – gauze or a fine sieve are suitable for this.
Add a little vegetable oil to the caviar. This method can be used alone or after rinsing, which enhances the effect. Alternatively, bitter-tasting caviar can be mixed with tastier caviar.
Knowing why caviar tastes bitter highlights the importance of choosing a high-quality product. Because most often, manufacturing and storage violations lead to a deterioration in taste.
