How is Beluga Caviar obtained?

Beluga caviar is obtained from sturgeon, specifically from the European Huso huso, known as the Beluga sturgeon. This fish is the largest species among sturgeons and lives in the Black or Caspian Sea. The majestic fish is rare today. The roe comes from female Beluga sturgeon and, with a diameter of 3.5 mm, is the largest among caviar varieties. The color of the caviar varies from light gray to anthracite. The skin is extremely thin, which makes the caviar particularly delicate and silky in consistency.

A special characteristic of the caviar is the soft crackling sound when taken out with a spoon. In expert circles, this is also referred to as "singing" caviar. Beluga in a tin can be recognized by its blue lid color.

What does Beluga caviar taste like?

The caviar is recognizable by its large grains with a gray sheen. In the mouth, the caviar proves uniquely creamy and delicate. It begins with a salty taste that transitions into a heavenly buttery aroma. The finish is characterized by nutty nuances that provide unique culinary delights.

What is real caviar?

Only roe obtained from sturgeon may be called real caviar. In addition to the Beluga sturgeon, there are the species Ossetra (Siberian sturgeon) and Sevruga. All caviar varieties are top-quality foods and impress with unique taste notes. Caviar is only lightly salted, which increases its shelf life. The term "Malossol" is therefore found on the tins, meaning "lightly salted." This refining method enhances the aroma without affecting the natural flavor.

Besides sturgeon caviar, there are also varieties from other fish, such as salmon. Red caviar is by no means a caviar substitute, but equally a top-class product. However, only sturgeon caviar may bear the designation "real."

How to enjoy Beluga?

Beluga caviar is one of the most expensive delicacies in the world and is usually served in a traditional tin or crystal bowl. To enjoy the caviar pure, a mother-of-pearl, wooden, or plastic spoon is used. Silver or metal would affect the taste due to the oxidation process.

The caviar is excellent on white bread with a hint of butter or on deviled eggs. A classic is caviar on blinis, fine pancakes made from buckwheat flour. Champagne, a dry white wine, or well-chilled vodka are the suitable drinks for such a feast.

How to store caviar correctly?

Caviar must always be sufficiently chilled, otherwise its taste will quickly be impaired. The sensitive food in the tin should be stored at a temperature between -2 °C and +4 °C. In no case should the temperature fall below -4 °C. If stored correctly, the caviar can be kept for a long time. An ideal place is the 0°C zone in the back of the refrigerator. In no case should caviar be frozen. Upon thawing, the grains would burst, and the taste and consistency would be impaired.
