Our trout is raised in marine waters under controlled conditions at the best aqua farms in Europe. The farmed fish obtained is carefully inspected by our specialists: only the best specimens are selected for further preparation.
In our production, IFS standards (International Food Standard) are strictly adhered to: the preparation process takes place in full compliance with the traditional recipe, but under conditions of absolute sterility, guaranteed by modern technologies. The meat is carefully cleaned by hand and salted using the Malossol method, then dried slowly at a temperature of no more than 35 ℃. The specially chosen cutting method of the fish meat promotes an even distribution of spices and the preparation of the product, while retaining the skin to ensure the integrity and attractiveness of the product.
Gastronomic Qualities
Slow dehydration, combined with simultaneous fiber separation and fat release, gives the meat a pink color, a delicate texture, and a slight oiliness. To give this traditional delicacy a new, original taste, we have used chili flakes. The flesh and seeds of this completely natural product have brought a fresh note to the familiar taste of smoked fish, added a piquant spiciness to a slightly salty aftertaste, and woven a spicy thread into the rich smoky aroma.
