How to cook fresh asparagus with smoked salmon

Who doesn't know the classic – fresh asparagus with new potatoes and boiled ham, with just a little melted butter over the asparagus?

But fresh asparagus with mildly smoked salmon from Kamchatka is a special kind of treat!

Ingredients:Fresh asparagus with smoked salmon

  • 6-8 thin spears of white or green asparagus per person
  • 300 g smoked Kamchatka wild salmon (sockeye or keta salmon) per person
  • some fresh dill
  • fresh lemon

Preparation

  1. Skin the salmon and cut lengthwise into slices.
  2. Drizzle with a little lemon juice and wrap 2-3 asparagus spears in each salmon slice.
  3. Serve on a plate and decorate with chopped dill.

Serve with fresh baguette and a light white wine.
