Caviar. What is it, actually?
Generally speaking, caviar is cleaned and salted roe (eggs) from various sturgeon species, mainly caught in the Black Sea, Sea of Azov, Arctic Ocean, and Caspian Sea. The most common species are the Sterlet (Acipenser ruthenus) as the smallest species, the Siberian Sturgeon (Acipenser baerii), the Russian Sturgeon (Acipenser gueldenstaedtii), and the Beluga (Huso huso), the largest sturgeon species. Caviar is occasionally called "Black Gold".
Caviar from Aquaculture
Until the turn of the millennium, caviar increasingly developed into a luxury product that was only available in small quantities. In 2006, a worldwide ban on wild caviar trade was initiated, ultimately leading to global quotas. However, caviar from aquaculture is gaining more and more importance; on the one hand, its quality is comparable to wild caviar, and on the other hand, it does not further threaten endangered species. Nevertheless, poaching is far from over, and fishing quotas in the lower Volga and Caspian Sea are still largely exceeded. Ecologists therefore warn consumers not to buy or eat caviar of unknown origin. A helpful tip is to check for the correct CITES number on the bottom label, as all genuine sturgeon caviar products must be marked with this code. In reality, aquaculture caviar is already widespread today and has brought the price of caviar back to an acceptable level.
Real or fake caviar?
A distinction is often made between real caviar and caviar substitute or fake caviar. This generally does not refer to artificial products but rather to the roe of other fish species, such as lumpfish or pike. According to the strict definition, only sturgeon roe is real caviar; everything else is fake caviar. Ultimately, however, the distinction is not the essential thing but rather the taste, and each variety has its own taste and its admirers. Therefore, our recommendation: "The proof of the pudding is in the eating", so just find your own favorite.
