Emerging in the pristine freshwater of northern rivers, salmon remains a marine fish, with its habitat encompassing the northern waters of the Pacific and Atlantic Oceans. Upon reaching sexual maturity, it returns to the river mouths to spawn. The salmonid family includes species such as pink, chum, sockeye, coho, Atlantic, chinook, and more.

Salmon has been highly valued by connoisseurs since Ancient Greece and Rome, as well as by the nobility of medieval Europe. Its industrial cultivation began as early as the 18th century. Today, alongside fishing, salmon farming in marine farms is widespread.
