The whitefish, a member of the salmon family, inhabits cold rivers and lakes in the Arctic, Pacific and northern Atlantic Ocean basins. Some species can live in both fresh and saltwater, the most important is crystal clear water, which makes whitefish an indicator of high water quality. Unlike other salmonids, the meat of this silver-colored fish with large scales is white. Adult specimens can reach a length of 70 cm and a weight of 6 kg. Spawning begins at the age of 4-6 years.
Whitefish caviar consists of hard, small, perfectly spherical, non-sticky grains with a bright golden-orange color, sometimes tinged with a pinkish-coral hue. The dense and elastic skin bursts easily when bitten. The caviar offers a delicate, fresh, salty-fishy flavor with a subtle cucumber aftertaste, which is also characteristic of the meat of the American or herring whitefish. The grains burst easily, and the thin skin dissolves in the juice they contain, making this caviar ideal for protein energy drinks. Its aroma is delicate and not intense.
