Kaluga caviar is characterized by its grainy texture. The grains' shells are elastic, dry or slightly moist, and glossy. Perfectly round caviar pearls reach a diameter of 3-4 mm. Depending on the age of the females, the color of caviar varies from dark gray to brown with an amber sheen.
The taste is delicate and creamy, with characteristic nutty notes and a fine iodine aftertaste. It is considered the mildest of all sturgeon caviars but also the most fatty. The aroma is slightly maritime.
