So, what is the difference between wild salmon and farmed salmon?

We use the term wild salmon to refer to salmon that lives in the wild and autonomously eats crabs, shrimp, and crayfish. Due to the nutrition without human intervention, the meat gets its typical red color. However, if it is farmed salmon from an aquaculture, you will notice a visually difference. Due to the addition of dyes, the meat glows orange.

Moreover, farmed salmon has a higher fat content because the fish is less active. Our salmon, also known as Gorbuscha salmon, is able to travel several thousand miles throughout its lifetime. The larvae hatch in fresh water in the estuaries of rivers, where they stay for some time. Afterwards, the young salmon form shoals and migrate to the open sea. As soon as they reach maturity after two years, they swim back to their home waters to breed.

But where does the salmon occur?

The wild salmon with the noticeably high hump can be found in coastal areas of the North Pacific as well as in North American flowing waters. 

The humpback salmon can also be found in Russia, from the Lena River to Peter the Great Bay in the Far East. Typical habitats for Gorbuscha salmon on Russian territory are the Kuril Island chain, the Commander Islands and Sakhalin Island close to the Japanese border. Our fine wild salmon fillet comes from Kamchatka, a Russian peninsula in Northeast Asia. Since 1996, most of the natural volcanic region belongs to the UNESCO World Natural Heritage.

Our salmon, with its delicate red color, low-fat meat and mild flavor, is considered to be the most noble of wild salmon. Our wild salmon fillet pieces have the name Malossol, which you will also often read on caviar cans in our online store. It is a Russian word meaning "lightly salted". "Mal" means "little", "sol" means "salt" in English. Adding salt makes the fillets more durable without affecting the salmon's pleasant inherent flavor.
