What is caviar?

True caviar is defined as the cleaned, degreased, and salted roe of female fish. The eggs are obtained from various sturgeon species, primarily native to the Black Sea, the Sea of Azov, the Caspian Sea, and the Arctic Ocean.

How do I recognize caviar?

Genuine and legally traded caviar can be identified by CITES labeling. The label must be present and undamaged on all caviar tins, jars and other containers. The tin color directly indicates the variety. Blue tins signal that the sturgeon caviar comes from Beluga. Yellow tins indicate that the roe comes from Russian sturgeon and Siberian sturgeon or Osetra sturgeon, while a red container stands for Sevruga caviar.

How do I determine the quality of the contents of a can?

The high quality of the interior is recognizable by loosely resting roe and a fresh sea smell, which, however, must not smell "fishy" or "metallic". Caviar is not always just black. There are fine nuances and even red caviar. Pay attention to these criteria when buying caviar online.

What is German caviar?

German caviar comes from the lumpfish, a species of fish found in the North Atlantic, and has particularly fine-grained roe. The caviar has a crunchy consistency and a pleasant, fresh, and salty taste of the sea. The roe's color ranges from pink to yellow.

Which caviar is the most expensive?

Among conventionally available sturgeon caviar, Beluga caviar is at the top of the world's most expensive caviar varieties. Connoisseurs consider it the best caviar due to its very delicate aroma. It is followed by Imperial caviar and Osetra caviar. However, the absolute front-runner is caviar from the albino sturgeon from Salzburg, which is only available in small, very limited quantities. A kilogram of this caviar would cost between 15,000 and 33,000 Euros, if it were produced in such quantities.

What does caviar contain?

Caviar is rich in valuable ingredients that can support a healthy diet. The finest caviar varieties contain essential amino acids, high-quality proteins, good fatty acids, vitamins A, C, D, B12 and E, and minerals such as sodium, potassium, and iodine.

How long does caviar last?

Because fresh caviar is refined with salt, its shelf life is also extended. Vacuum-packed, it can be kept for up to eight weeks. If it is also pasteurized, its shelf life increases to three months. Once opened, it can be kept for a maximum of three days in the coldest part of the refrigerator in the zero-degree zone. The temperature must never drop below -4 degrees Celsius, as this will alter its consistency and taste. Freezing should also be avoided at all costs.

What does the designation "Malossol" mean?

The predicate "Malossol" is the Russian term for "lightly salted." Although high-quality caviar is salted, it should only be salted as much as necessary for temporary preservation. This is the only way to ensure that the authentic taste of caviar from sturgeon and similar fish is preserved.
